Lemon Buttermilk Pancakes

Ingredients

 
PANCAKE BATTER 
1 1/2 cup all purpose flour 
1 tbsp baking powder
1 tsp salt 
2 tbsp white sugar 
1 1/4 cup buttermilk 
2 eggs
3 tbsp melted butter 
2 tsp vanilla
2 tsp lemon zest 
 
TOPPINGS
1/2 cup Mixed Berry Jam
Icing sugar for garnish

• Sift dry ingredients into large mixing bowl 
 
• Beat eggs with sugar and melted butter until smooth 
 
• Add egg mixture to buttermilk. Add vanilla and lemon zest 
 
• Combine wet ingredients with dry ingredients and whisk until batter comes together and is relatively smooth. Be careful not to overmix 
 
• Heat non stick pan or griddle over medium-low heat. Spray or grease pan. 
 
• Using a 1/4 inch measuring cup, ladle batter into pan - be careful not to overcrowd pan 
 
• Once bubbles start forming in batter, flip pancakes and cook for another minute 
 
• Top finished pancakes with Mixed Berry Jam and dust with icing sugar
