Ingredients
BURGER PATTIES
1 lb ground chuck (80/20)
2 tbsp Smoke & Spice mix
TOPPINGS
4 brioche buns
2 tbsp olive oil
1 beefsteak tomato
1 red onion
1 head bibb lettuce
4 slices provolone cheese
SANDWICH PICKLES
1 large cucumber
1/2 cup white vinegar
1/2 cup apple cider vinegar
1/2 cup water
1 tbsp Homemade Pickling Spice
2 tbsp white sugar
1 tbsp kosher salt
3 cloves of garlic (crushed)
CHIPOTLE MAYO
1/4 cup mayonnaise
2 tbsp Smoky Chipotle Hot Sauce

• Cut cucumber in half crosswise, then into thin slices lengthwise - set aside in glass jar. Combine vinegars, water, salt, sugar, spice mix and crushed garlic in small sauce pot. Bring to boil and pour over cucumbers. Once cooled - set aside in fridge overnight
• Divide the ground chuck into 4 equal portions and coat both sides with Smoke & Spice mix - set aside
• In a small bowl, combine mayonnaise with Smoky Chipotle Hot Sauce and set aside for assembly
• Brush brioche buns with olive oil and lightly toast on grill or cast iron skillet
• Thinly slice red onion and tomato, and tear bibb lettuce
• Over medium heat, sear burgers on grill or in cast iron skillet for 4 minutes. Let crust form on outside with spice mix, flip and cook for another 4 minutes. Add cheese slice on each burger, cover with lid and let steam for 1 minute or until cheese is melted. Turn off heat and set aside to rest
• Spread chipotle mayo on both sides of buns, place burger and top with lettuce, tomato, onion and your homemade pickles
